The glume of rice is hard, which can protect the grain and resist insect pests and the influence of external temperature and humidity to a certain extent. Therefore, rice is better than general grain products. However, rice is easy to sprout and not resistant to high temperature, which needs special attention.
1、 After ripening of rice
Generally speaking, after the new grain is dried in the sun, the farmer brothers grind the rice and put it into the pot. They think it's fresh and delicious, but it's not. Because the grain seeds are harvested when they are mature in the field. At this time, the grain is called "harvest maturity" or "technical maturity". But in fact, the physiology is not mature. It is characterized by vigorous respiration, poor storage resistance, low seed germination rate, low finished product rate and poor eating quality. For example, after a certain storage period, the internal physiological and biochemical changes continue to be completed, and gradually reach the physiological maturity, so that the above phenomenon can be improved. Generally, the ripening period of rice takes about four weeks.
2、 Storage methods of rice after storage
1. Timely ventilation: rice is protected by glume, which can alleviate moisture absorption of rice, has certain resistance to insects and molds, and is easy to keep when moisture and impurities meet the standard. However, it is difficult to dry rice due to short sunshine, low temperature and rainy days. Therefore, there is a large amount of water and bacteria. If the storage is improper, it is easy to get hot and moldy, causing unnecessary losses. Therefore, the doors and windows of the stored rice should be opened and closed frequently, the grain surface should be turned frequently to cool down, and the plastic film should be used for storage to control the grain temperature rise.
2. Ensure the quality of stored rice: the rice with large moisture, impurities and imperfect grains is easy to heat and mildew, but not durable. Therefore, improving the quality of stored rice is the key to the safe storage of rice. The safe moisture standard of rice should be determined according to varieties, seasons, regions and climatic conditions. Generally, the percentage of indica rice is less than 13%, and that of Japonica rice is less than 14%. The less impurities and imperfect particles, the better. If the moisture content of the stored rice is large and there are many impurities, it should be stored in different grades, dried or dried in time, and screened or air selected to remove the impurities.
3. Low temperature airtight: make full use of the cold and dry weather in winter to ventilate, so that the grain temperature can be reduced to below 10 ℃ and the moisture content can be reduced to within the safety standard. Seal the gland before the temperature rises in spring, so as to spend the summer safely.
